Asian Slaw

I like to serve this Vietnamese-inspired Asian slaw with paleo Satay skewers. The dressing for this salad is the same as the marinade for the skewers (minus the oil), so if you plan on making the skewers, just follow the instructions there for the marinade, then omit all the dressing ingredients here (except oil). This is also a fine salad served with salmon or any other occasion, really, and as always, its gluten-free and soy-free.

Instructions
  1. Cut off the green parts of the bok choy and reserve for another meal. Slice the the white parts in half, then shred, using the 2mm slicing blade on a food processor. Use the same blade to shred all the snap peas. Change the blade to a shredding blade, and process the carrots.
  2. Combine all ingredients for the dressing, except olive oil, in a large salad bowl. Whisk in the olive oil. Add the shredded vegetables and cilantro and toss. Serve with paleo Satay skewers**.
Recipe Notes

* If you can't find lemongrass, you can substitute lemon zest from one lemon OR 1/4 cup fresh lemon verbena leaves.
